Makes 10 servings
3 1/2 pounds cubed beef
3 onions, 6 carrots
2 1/2 cups potatoes
3 celery stalks
1/2 pound fresh mushrooms
1 (16 oz.) package frozen vegetables
1 (28 oz.) can crushed tomatoes
5 garlic cloves
2 teaspoons dried rosemary
2 teaspoons dried sage
1 tablespoon dried basil leaves
salt and pepper to taste
7 cups water, 1 cup red wine

1. Preheat oven to 250°F.

2 . Prepare the vegetables, slice onions, carrots, celery; chop potatoes into cubes and cut mushrooms into quarters. Press the garlic.

3. In a large, ovenproof pot, combine beef, onions, carrots, potatoes, celery, mushrooms, mixed vegetables, tomatoes. Season with garlic, rosemary, sage, basil, salt, pepper. Pour in water & wine. Cover tightly with foil and bake 5 to 61/2 hours.
